Pink Lemonade Cookies

Ahhh... Summer...

Lemonade stands.

Did you ever have a lemonade stand as a kid? 

I did. We weren't very successful as we lived on a q-u-i-e-t street in a small town. Plus, we probably drank all the lemonade. That can't help, right?

Maybe if we had made some of these cookies to sell along with our lemonade, we would have had more success! ☺

Pink Lemonade Cookies  {Print Recipe}
Adapted from Taste of Home
Makes approx. 3 dozen

1 cup butter, softened
1 cup sugar
2 eggs
3 cups flour
1 tsp. baking soda
3/4 cup thawed pink lemonade concentrate, divided
Red food colouring (optional)
Confectioner's sugar for dusting

In a large bowl, cream butter & sugar until light & fluffy. Add eggs, one at a time, beating well after each addition. Combine flour & baking soda; add to the creamed mixture alternately with 1/3 cup pink lemonade concentrate & 4-6 drops of food colouring, beating well after each addition.

Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake at 400ยบ for 8 minutes. remove to wire racks. Brush with remaining lemonade concentrate; dust with confectioner's sugar. Cool.
